Technical struggles

Dear friends!
I am currently suffering from a minor technical setback, related to a Mac left on the kitchen table, a glass of water and one of my children ( who shall remain nameless) I do not much like typing on my phone, but I just really wanted to share with you the lilacs that are blooming all over my neighborhood. The ones in the picture frame the entrance of my appartement building. The scent is amazing!
Hope you are having a wonderful spring!

We are having awsome spring weather and a long weekend to boot here in Oslo. So on this extra day off what could be better then a really good lunch sandwich? I found the recipe for this one here.  For dinner today I am recycling one of my favorite MFM recipes.  Hope you have a good one!

Oh and if you do have a favorite vegetarien recipe; please share!

unfinished business

A few weeks ago I stumbled over the link up,  finish it up Friday, at this site. Its been whirling in my mind for some time. As you can see I do have quite a lot to finish up! Some of these projects are really old! The granny squares are more than 10 years in the making. Being a pack rat and a “see’er of possibilities”  these projects were never chucked. Although to be fair I have had a real clean up around the  house lately and some projects really got x’d. I finally have come up with 2 good questions to ask myself when faced with old projects or items that could turn into a project; do I really want to spend time on it? Do I really WANT  the finished result? The clearing up in the old projects and organizing them in one space make me feel very much closer to the finish line!

Now I am left with this lot, plus all the new fabrics I bought recently..

I do hope to link up with something finished ..soon!

Do you have half-finished projects stuck away in your nooks and crannies?

meat free monday -chickpeas revisited

A few weeks back I made a my old standard chickpea curry and Nina over at Toftsnumulite suggested in a comment section that I add some dried apricots and substitute the garam masala with cinnamon. Now I did not actually have cinnamon today , so I used cradamom instead. Let me tell you this totally lifted this dish!

We areactually on a bit of an Indian bent of late so I pared the curry with potatoes and aspargus with chilli and tumeric. (It is a variaton of a dish a very good friend thought me how to make whith cauliflower years ago. I have no idea what was called)  I served the meal with a minty, gingery youghurt sauce and rice. My soon to be 12 and 10 year olds Loved all of it to my great surprise. The 2 yr old enjoyed the poatoes, aparagus and rice.

Now the reason I chose potatoes and asparagus is that I know that my children eat both - chickpea curry with apricot was a new twist and not such a safe bet. I always try to serve at least one item I am confident they will eat, at every meal. I make them try every dish and then I really, really try not to make it an issue if they wont finish somthing. Experience has thought me though, that it pays to serve " rejected" foods over and over - they do often take to it after quite some time ( I am talking years here)

recipe for potatoes and asparagus:

3-4 potatoes ,peeled and diced

one yellow onion, diced

A small bundle of asparagus chopped int inch lengths

1 ts chilli

1ts tumeric

How:

put alle the ingredients except the asparagus into a pot and boil under a lid untill the potatoes are almost tender, add the asparagus. (It does not need to be coverd with water) contune cooking untill the potatoes and asparagus is tender. Drain of the liquid and add a ts of salt and ats of sugar. Heat some oil in a pan ad fry mix untill it has a nice color and serve.  It will actually taste better if you cook the ingredients and then let them cool in the liquid for a few hours or over night before you drain and fry.
